Clouet's Brut Nature comes exclusively from Grand Cru, family-owned vineyards in and around the village of Bouzy in the Montagne de Reims, which is known for its red grapes, especially Pinot Noir. This blend of 60% Pinot Meunier, 20% Pinot Noir and 20% Chardonnay is somewhat atypical in that they elevate Pinot Meunier above Pinot Noir. It's bottled bone dry with no dosage. 80% is fermented in stainless steel with the balance in old Sauternes casks. However, 50% of this cuvee comes from a 10 year old solera so the new wines can learn from the older ones. Once bottled, it's cellared in bottle prior to disgorgement. The result is crisp, clean and complex with extremely fine, persistent bubbles, pronounced minerality, subtle tart berry notes and a hint of toasty brioche.
