Lobo Hills Cab Franc
This wine brings loads of raspberries, strawberries, white pepper, hay and black olives to its aromas and flavors. This Cabernet Franc was fermented on rocks from the vineyard and the cap was managed by hand. By hand, we mean that we pulled on sanitized vet gloves (that go up to the shoulders) and suppressed the cap by hand. This minimizes extraction while still allowing for color development. This wine was aged in neutral wood for two years and racked just before bottling. Unfined and unfiltered… just like we prefer. We recommend a 30 minute decant only.
