Petit & Bajan “Ambrosie” Champagne
From husband-and-wife team Richard and Véronique Petit, Petit & Bajan is one of Champagne’s most exciting small producers. The “Ambrosie” cuvée blends 70% Chardonnay and 30% Pinot Noir from Grand Cru vineyards in Avize (Côte des Blancs) and Verzenay (Montagne de Reims). Fermented in stainless steel with extended lees aging, it balances richness and precision: aromas of pear, lemon curd, and toasted brioche unfold over a chalky, saline backbone. The palate is textured yet racy, with persistent bubbles and a long, clean finish.
A true expression of terroir-driven Champagne, “Ambrosie” is perfect on its own or with oysters, caviar, roast poultry, or soft cheeses. Dosage: ~5 g/L. ABV ~12.5%.
