Wine Making Method: Natural, native yeast fermentation, vegan.
Varieties: 80% Merlot, 8% Cabernet Franc, 12% Cabernet Sauvignon
Soil: Clays, Ferruginous Limestone Subsoil.
Farming: Organic
Harvest: Hand harvest plot by plot at optimum ripeness. The grape crop is density sorted and by hand in our cellar.
Maturation: Stainless steel vats with one third of the blend in matured french oak barrels for 12 months
